I made up these names, just so there could be names, and have tried to include "subject" and "object" versions of each.

  • I saw him eating fish
  • I heard him singing

  • I #know/??saw his eating of fish
  • I #know/#heard his singing

  • I know/saw (that) he was eating fish
  • I know/heard (that) he sang

  • I know/saw what/which one/how many/how often/etc he ate
  • I know/heard why/how/etc he sang

Appositional

  • The man, eating his meal, …
  • The man, spotted by the reporter, …

Restrictive

  • The man eating his meal
  • The man spotted by the reporter
